KIMAMI SEWAI

Hello everyone

Sewai… A must preparation for Eid. We make sewai in many ways but this one is the richest and yummiest of all. Kimami sewai, it’s loaded with dry fruits, milk, essence, mava and many more. A must try delicacy for all sweet tooth fellows. Kimami sewai is mainly made on the occasion of Eid celebration. When we were kids, used to go to our Muslim friends on Eid and had these heavenly sewai many times. This  Eid I was having strong craving for this delicious treat but had no one to offer these to me so I tried it myself and viola , succeeded in replicating that same flavour in my mouth… Yummmmm. 
Step wise recipe of this heavenly treat is given, must give it a try if you are true sweet tooth😊

KIMAMI SEWAI
Serves :12-15
Time: 1 hr

Ingredients 

300 gms fine sewai ( preferably super fine suterfeni, I missed)
500 gms sugar ( you can use more, as it calls at least 3 times sugar to sewai ratio)
1 1/2 lt milk
2 cups chopped dry fruits( pistachio, cashews, almonds, walnuts, raisins etc)
1/2 cup descicated coconut
10-12 dates, chopped or dry dates, soaked and pureed
1/2 cup dates syrup( completely optional)
1/2 cup mava( khoya) or 1 cup milk powder + 1/4 cup milk 
8-10 cloves
2 inch piece cinnamon stick
8-10 green cardamom
1/2 tsp green cardamom powder
1 -2 tbsp ghee


Method:

Heat some ghee in a heavy bottomed wok, fry sewai in it till nice golden in colour. Keep it aside. Be careful while frying so not to burn it, keep flame at medium to low and keep stirring occasionally to get even golden brown colored sewai.
Now in little ghee fry all dry fruits except dates, till nice aromatic and golden. Again be careful, not to burn.

Now heat remaining ghee, add cloves, green cardamom and cinnamon stick. Sauté till aromatic then fry mawa in it till light golden, or add powder milk and 1/4 cup milk in it , sprinkle some more if needed and fry till it become of mawa consistency. Now add chopped or pureed dates and fry till it get incorporated with mawa. Keep it aside. 

Now boil 1 kg milk in same wok and add sugar in it. Let it boil till it become 3/4th. It may cuddle a little but not to worry as it will work as flavour enhancer. Now add fried sewai, dry fruits , mawa , dates syrup and remaining milk.  If you find it dry for you then can add some milk or water at this stage and simmer for 8-10 mins or till sewai is cooked. As different thickness of sewai may take different time to cook.

Now switch off the flame and add green cardamom powder or any essence of your choice to it , mix well and cover . So that sewai will absorb all the flavour and aroma. Garnish with chopped dry fruits, Serve warm or chilled, in both ways it’s just heavenly.   

You can use dryfruits of your choice and also can increase or decrease its quantity as per your taste.
Sugar can also be increased as per your taste but believe me this much is also too much for us so just try it first.
If you are using super fine variety of sewai then may be it need less liquid to cook so add accordingly, but i made dry sewai and if you want it with syrup then can add more milk or water to it.
Dry rose petals or saffron can also be added to it.
You can serve it with milk too, to cut its extra sweetness for non sweet tooth guests.

VEG HALEEM

Haleem…. This one word brings a single thing in mind, that is non veg. But wait , here it’s veg one. Yes , you heard right this is for veg fellows who ever wondered of it to taste but couldn’t due to non veg . So here come easy but flavourful haleem recipe for all haleem lovers to try this for a change of taste.
Stepwise recipe is given below ,hope you all will give it a try, even non vegetarians too can try for a change 😊.

VEG HALEEM


Serves: 5-6
Time 40 mins

Ingredients 

2 cup soya nuggets , soaked and ground
3 tbsp Dalia ( broken wheat) , soaked
1/2 cup barley or red lentil( masoor dal), soaked
2 onions, finely chopped
3-4 green chilies, broken in half
1 1/2 tbsp ginger garlic paste
1 tsp turmeric powder
1 tsp coriander powder
2 tsp Kashmiri red chili powder
1/2 tsp garam masala powder
1/2 tsp cinnamon powder
1 tsp cumin powder
20 almonds + 4 cloves, powdered together
3/4 cup thick curd ( yogurt), beaten
1/4 cup mint and coriander leaves( equal ) , finely chopped
2 tsp lemon juice
2 tsp oil
1 tsp ghee or butter

Method:

Heat oil and ghee in a wok, add chopped onions and green chilies. Fry till transparent then add ginger garlic paste and sauté for 2 mins. Now add turmeric powder, cumin powder, coriander powder, garam masala, chili powder and cinnamon powder, add some water to avoid burning spices. Fry till it starts leaving edges of the wok and nice aroma comes. 

Now add ground soya nuggets and sauté for 3-4 mins then add soaked Dalia and lentil. Add sufficient water and salt, cover it and let it cook till nice soft and cooked.

 Now add almond clove powder and beaten curd. Adjust water and Let it boil . 

Add chopped mint and coriander leaves and lemon juice, adjust salt .Simmer for 5 mins and done.

Garnish it with chopped coriander leaves or fried onions and serve with roti, naan or rice.
I used red lentil in it but if you have barley then go for it otherwise lentil too give a delicious flavour and texture to the dish.

EASY KALAKAND

Sweets are the heart of each and every festival. No festival can be completed without having some sweets in menu. So here I am having a very easy , quick but tempting Indian sweet, kalakand. It needs minimum ingredients and time but turn out to be a droolsome awesome dessert. Any sweeth tooth can never say no to this scrumptious dessert. Whenever you want to please your guests without any fuss then go for it, you will never regret.
Recipe is given below, must give it a try. Hope you will like it.

EASY KALAKAND


Yield: 15-20 pieces
Time :15 mins

Ingredients

1 1/2 cup mashed soft paneer or chhena ( cottage cheese)
3/4 tin condensed milk ( 300gms)
1/2 cup milk powder
1/2 tsp kewda or rose essense or green cardamom powder
1 tbsp finely chopped pistachios or almonds

Method:

 Heat a nonstick wok on medium flame then add mashed paneer, condensed milk and milk powder. Cook , stirring continuously to avoid burning, till it starts leaving edges of the wok. Then add essence or cardamom powder and mix well. 

Spread it in a greased tray evenly and sprinkle chopped pistachios or almonds all over it and press a little to stick them firmly. 

Now let it cool completely then cut desired slices and serve. Your easiest yummy sweet is ready to hog on😊.

Once it starts leaving edges of the wok means it’s ready to spread, so don’t over cook the mixture otherwise it may become little chewy.
Always use soft paneer to get nice texture of sweet, also put every thing together in the wok . If you cook paneer first then it may become chewy. 
You can use any essence or dry fruit of your choice or simply skip it.

OATS MANGO KULFI WITHOUT CREAM

Who don’t like kulfi or ice creams, but if it’s made of oats then? Wow…. Yes , it’s absolute taste with health. I always tried to skip Ice creams and kulfis due to creams added in it but now no issues. An idea strikes me few days back that if I can use oats in my pasta to make it creamy and saucy then why not give it a try in some sweet treat. Suddenly my kid demanded ice cream , so thought to try this in kulfi first and the result was awesome. My fussy eater too loved it , what else is needed. Happy kids, satisfied mom, that’s all😊😊. It’s very easy, minimum cooking kulfi with seasonal fruit, mango. Recipe is given below, hope it comes up to your expectations.

OATS MANGO KULFI WITHOUT CREAM



Yield: 1- 1 1/4 lt 
Time: 20 mins ( freezing time excluded)

Ingredients 

3/4 cup oats
2 1/2 cup milk
2 1/2- 3 cup mango puree  ( pulp of four medium sized ripe mangoes)
1 tin condensed milk ( 395gms)
Chopped dry fruits ( optional)
1 tsp mango essence ( optional)

Method :

First of all soak oats in milk for 20-30 mins. Then cook it till nicely done. Let it cool then in a grinder make its smooth and creamy puree. Use more milk if needed, as the puree should be thick creamy but of pouring consistency.


Now add mango puree , condensed milk, dry fruits( I skipped) and essence to it. Mix well and fill in kulfi molds .


 Freeze for at least 7-8 hrs or overnight. Your yummy kulfi is ready to serve.


If your mangoes are not so sweet then add some sugar as per your taste. Adding dry fruits is optional, but I will recommend you to add as it will hide that little taste of oats in kulfi.
If you don’t want to add mango in your kulfi then substitute it with equal amount of thickened milk of same consistency and lots of dry fruits.


Use kulfi mold is also recommended, as freezing in big bowl may lead to formation of ice crystals in it. Then you should churn it again after half frozen to avoid ice crystals .
I used M&M ‘s tubes to make kulfi as don’t have kulfi molds, so you can also use your jugaad.😊
Your simple, easy and healthy kulfi is ready for health conscious kulfi lovers and fussy eaters too.

TRADITIONAL IDLI, DOSA AND UTTAPAM WITH OATS

I always found South Indian foods a real comforting food. Everyone likes idlis, doses, uttapams, sambhar etc  and I too a big fan of these soothing and light comforting food. As I always try to make little healthy changes in my regular cooking, in my previous idli recipe I used Dalia and this time going to introduce you with oats idlis but made in traditional way as soaking and fermentation is included in whole process. So why not give it a try, recipe is given below.

TRADITIONAL IDLI, DOSA AND UTTAPAM WITH OATS




Serves: 4-5
Time: 2 hrs( excluding soaking and fermentation time)

Ingredients 

1 cup split urad dal
1 cup oats
2 cup rice ( idli rice or any old variety rice)
1 tsp fenugreek seeds( methi)
1 fistful cooked rice or soaked poha ( flattened rice)
1/2 tsp salt

Method:

Soak oats, rice +fenugreek seeds and dal separately for 3-4 hrs. Then grind dal using little water till light and tiny bubbles are visible in it. It will take nearly 15-20 mins for grinding each batch of dal, so have patience, as it’s needed for good soft and spongy idlis. Now grind oats and rice + cooked rice or poha + methi to a smooth paste. Now mix all together and add salt. Give it a good stir and let it ferment overnight in a quit big vessel to avoid overflow of batter.
Always use little water at a time for grinding other wise you may end with runny batter. Idli batter should be as thick to be fall as a blob.
When it get nicely fermented it will become frothy. Ready your steamer or cooker with rolling boil water .Now grease idli molds and fill 2 tbsp batter in each of them and steam for 8-10 mins. Let it rest for 2 mins after done ,then scoop out warm idlis with wet spoon. Serve with your choice of chutneys and sambhar.



If you wish to make uttapam out of this batter then dilute a little. It’s batter should be little thinner than idli batter and thicker than dosa batter. Thick pouring consistency batter. Now heat a non stick pan on medium heat, Apply some oil on it and pour 2-3 ladle full of batter on it and spread like a thick dosa. Sprinkle some finely chopped veggies ( grated carrots, finely chopped onions, tomatoes, capsicum,coriander leaves, chilies etc) over it and press lightly with a spatula so that they get nicely stick to batter. Cover it with lid and cook till upper sides looks dry, then flip it and cook for another 1-2 mins.


 Now your steaming hot spongy uttapam is ready to be served.


For making dosa, dilute batter further more till dosa batter consistency. Now heat nonstick dosa tawa on medium heat apply some oil and wipe it with tissue paper. Pour 1 ladle full of batter on it and spread  with light hand in circular motion outwards. Let it cook till brown patches are visible , then fold and serve with chutney and sambhar. 


Your crispy, crunchy dosa is ready. You can also stuff it with your choice of stuffing.



If you are soaking dal and rice over night then try to soak oats in the morning, it will be ready in 1/2 -1 hr. Overnight soaking of oats may leads to smelly batter. Don’t  over ferment your batter , once it’s done try to use it or keep it in fridge. Before using it let it come to room temperature for best result.

Your all the three South Indian delicacies are ready with the same batter, either enjoy at a time or have three times, different breakfast ,lunch and dinner .

NO BUTTER NO SUGAR SPICED OATS BANANA WALNUT LOAF

My sweet tooth daughter always used to ask why healthy stuffs are not yummy and what we like to eat are always comes under unhealthy category 😕😕. Actually my whole family is sweet tooth and also having great tendency to get fat too easily😭 , so to avoid extra calories in our diet we have to make a reasonable distance with sugary and fatty stuffs😰. 
But this is also like a boon too me, so that I can experiment with healthy stuffs and turn them to interesting healthy cum yummy dishes.
This cake is the best example of taste with health. I used all healthy alternatives to usual ingredients of a cake, which lead to this super yummy healthy sweet treat. Now no need to take just one bite of your sweet crush to satisfy your craving. And the second best thing is , it’s best and yummy way to use your over ripe bananas. Spices added in this cake,  boosted its flavor to another level. You can say it a perfect combo for your cup of tea. A happy dessert to health conscious fellows.
Step wise recipe is given below, hope you will enjoy this tasty, yummy and healthy treat. sure give it a try , you will never regret.

NO BUTTER NO SUGAR SPICED OATS WHOLE WHEAT FLOUR BANANA WALNUT LOAF



Serves: 5-6
Time: 1: 15 hrs

Ingredients 

1 cup whole wheat flour
1/2 cup oats, powdered
3 big bananas, ripe
1/2 cup jaggery, grated
1/3 cup oil
2 tbsp thick yogurt( curd)
1/2 tsp baking soda
1 1/4 tsp baking powder
1/2 tsp cinnamon powder 
1/8 tsp salt
1 inch ginger, grated
1 tsp vanilla essence 
10-12 walnuts, roughly chopped 

Method:
First of all grease a loaf pan and dust it with some flour, keep it aside.


Mix well whole wheat flour, oats powder, baking soda, baking powder, cinnamon powder, walnuts and salt together, keep it aside for later use.


Now mash bananas with a fork till they become a lump less puree. Add grated jaggery , vanilla essence and curd in it and mix well till jaggery gets dissolve. Now add grated ginger and oil , again mix well. 


Add flour mixture and fold it to make a lump less smooth batter. Pour in greased loaf pan.


 Bake in a preheated oven at 180degree C for 40 – 50 mins, or till tooth pick inserted in it comes out clean. Mine took 55 mins, so keep an eye on it after 45 mins as different oven take different time. Time also depends on baking pans, size and shape.
Let it cool for 5 mins then invert on a wire rack.

 Let it cool completely before slicing, to get neat slices.


Your super yummy and healthy cake slices are ready to go with your cup of tea.
Enjoy these guilt free scrumptious sweet treat any time. It’s good for kids tiffin and mid meal hunger sprang.


You can use any spices and any dry fruits of your choice. But surely try this combo too as ginger and cinnamon let this cake to another level.
You can increase or decrease the quantity of jaggery as per your taste and sweetness of bananas, but this one is for perfect sweetness😊.
You can also use any shape of baking pan, but then baking time may change, so be cautious while baking and keep checking in between.

BASBOUSA ( A MIDDLE EASTERN DESSERT)

Today I am here with one more scrumptious middle eastern dessert, Basbousa. It’s more like a semolina cake but with a distinct flavour. So tempting and delicious one for all sweet tooth to taste at least once. I bet you can’t stop yourself from taking more and more. The most interesting thing is that it’s so easy to prepare too. Recipe is given below, just try and relish on these heavenly beauties.

BASBOUSA 



Yield : 25-30 pcs
Time: 50 mins

Ingredients 

2 cup semolina ( sooji)
1/2 cup sugar
1 1/2 tsp baking powder 
1/2 tsp baking soda
3/4 cup thick curd ( yogurt)
1/3 cup ghee or refined oil 

For syrup:

1 cup sugar ( I took 3/4 cup , as kept mild sweet)
3/4 cup water
1 tbsp lemon juice
1/2 tsp orange essence or rose water

Method:

Mix all ingredients except for syrup ones, together to a smooth mixture. It will be neither crumbly nor liquid, just like nice wet dough.
Now evenly spread it in a greased baking tray . Let it rest for 5 mins then with the help of wet knife make cuts of your choice and decorate with almonds or pistachio. 


Now bake it in a preheated oven at 180degree C for 20- 25 mins till nice golden top appears. If you don’t get golden top after 25 mins then either shift your tray to top most rack in oven or increase its temp to max and bake for another 5-10 mins or till nice golden top appears. Mine took exact 35 mins, 25 mins at 180C and 10 mins at 230C.
In meanwhile prepare sugar syrup. Add sugar and water and let it boil till sugar get dissolved. Switch off the flame and add lemon juice, let it cool. Once cool then add rose water or orange essence. Keep it aside.



Once baking is done, keep out the tray and pour cool syrup all over the hot cake ,evenly. Let it cool properly then cut though pre made cuts and serve.



Your simplest and yummiest dessert it ready to make it way to your plate. Just enjoy these palatable beauties first with eyes then gobble them one after other.


You can add more sugar in syrup if like more sweetness, I kept it mild.

HEALTHY COMPLAN CHOCO COOKIES

Hello everyone 

I always wondered why kids are so fond of chocolate flavor in everything. I was planning to bake some cookies at home with some healthy ingredients . But at the same time my lil one announced, he only want chocolate flavor for him. Then  Dimaag ki batti jali 😁 as I had chocolate flavored complan sitting on my cupboard for long with no fan of it at my home. So I added it too in my cookies and final product is just melt in mouth awesome choco cookies. I too replaced butter by margarine, as it is assumed to have less cholesterol compared to butter.  Hope you all will too love it, stepwise recipe is given below, just try it.


HEALTHY COMPLAN CHOCO COOKIES 

Serves: 40-50 cookies 
Time: 1 – 1 1/2 hr (depend on no.of batches )

Ingredients 

3/4 cup butter or margarine at room temperature  ( I used margarine )
1 cup whole wheat flour , leveled
1 cup all purpose flour (maida), leveled 
1/4 cup Cocoa powder
1/4 cup chocolate flavored complan 
1/2 tsp vanilla essence 
1/2 cup powdered sugar

Method:

First of all whisk butter, sugar and vanilla essence together till fluffy.


 Now sieve both flours, cocoa powder and complan together to get lump less nicely mixed flour. Add beaten butter mixture and dry flour together and mix well till they start resembling bread crumbs texture. 
Now use your palm to knead it. Heat of your palm will help it to come together as a dough. Due to addition of complan it may not form a proper dough but when you will press the whole mass in between your fist , it will hold a firm shape. Have patience as it will take nearly 8-10 min.

Now take 1/4 th part of it and press to form firm shape then roll it on a plane surface with the help of rolling pin. It may break while rolling, so keep collecting broken edges and pressing with hand to make even thickness flat dough surface of 1/2 cm thickness.


 Now using cookie cutter of your choice cut cookies and keep them wrapped in cling film or in plastic wrap in freezer for 10 mins. 


Meanwhile preheat your oven at 180degree C. And in the same way cut other batches of cookies and store covered in freezer . Now assemble 1st batch cookies in a baking tray lined with a parchment paper or any smooth paper. Bake at 180 C preheated oven for 15 mins.


 In the same manner bake all batches. When baked, cool all the cookies on a wire rack. After cooling completely, store in a air tight jar and enjoy with a cup of tea.


You can use any shape or size of cookie cutter. But if you are planning to cut with knife then use more butter to make proper dough that can be easily rolled and cut. I used only minimum required margarine to keep my cookies healthy enough. You can use as per your convenience. 
You can take any health drink you like or can simply skip too.
These can be kept for long time. Just enjoy these easy and healthy kids friendly choco cookies. Hope you will definitely try it once.

LOW FAT KUNFAH

Hello everyone 

Once again I am here with a low fat but delicious, mouthwatering dessert very popular in Middle East. Though I can’t say it is a completely healthy recipe but of course I tried to cut nearly half the calories than traditional one. As this recipe calls for too much butter and sugar, so clearly it’s a rich dessert. But I used minimal butter and less sugar to avoid extra calories, without compromising its taste. This is one of the best dessert I had ever. I made it my way with some twists in ingredients, but the end product is total worth to my effort. It’s not only tempting but also a treat to eyes too.
Recipe is given below, hope you will definitely love it.

LOW FAT KUNFAH



Serves:5-6
Time: 1 hr 

Ingredients 

300 gms  very thin vermicelli (it requires kataifi dough but I took vermicelli)
2 tsp butter or ghee
1/2 cup milk 
1 cup sugar
1cup water
2tsp lemon juice
1cup grated cottage cheese
1/2 cup grated mozzarella cheese
1 cup unsweetened rabdi 
1 tbsp Roasted dry fruits as per ur choice
1/4 tsp orange red food color
1/4 tsp rose or orange essence

Method:

First of all take a baking dish and grease it with some butter and food color. 
Mix 2/3 part of vermicelli with 2 tbsp of milk and 1 tsp butter or ghee, just to make it little moist. Don’t add more milk otherwise it will become soggy so adjust milk quantity accordingly.
Now spread this in the baking dish and press with spatula to get a firm base.
Add all the cheese , rabdi and dry fruits together and spread it on the vermicelli base.
Now take the rest 1/3 part of vermicelli and moisten it with milk and cover the cheese layer completely. And again press it firmly.
Bake it in microwave convection mode at 200degree for 25 mins. U can also bake it in regular oven for the same temp and time.
Time also depend on the vermicelli you took. Mine was roasted one , but if you are taking unroasted white vermicelli then bake for long and keep watching till it become nice golden color.
I used this vermicelli.



In the meanwhile make sugar syrup adding sugar and water and boil for 10 mins and add lemon juice . let it cool and then add rose essence or orange essence.
When the kunfah is baked let it rest for 15 mins then pour the sugar syrup all over it and again let it rest for 1/2 hr. Then invert it and decorate .



If you like more crunch then can pour syrup on individual servings also.
To make instant rabdi, boil 1/2 lt milk in a thick bottom pan till it become 3/4 then add 2 bread slices churned with little milk to it. Continue cooking till it become nice thick like rabdi.
If you don’t want to use rabdi then can use condensed milk too.

WHOLE WHEAT FLOUR DORA CAKES ( DORAYAKIS)

Hello everyone 
My kids are a big fan of doremon cartoon. They often see doremon eating his favorite Dora cakes and they too start drooling over it. I never thought it would be so easy to prepare at home too. Once I came across a post by our CAL friend Garima Sarolia Narera, of Dora cakes. From that day I was thinking of trying it with some healthy twist. So here is mine whole wheat flour Dora cakes. Soon will come up with its eggless version too, but till then enjoy these beauties. My kids got surprised and over excited to see these chocolate oozing soft and fluffy DORAYAKIS .Special thanks to Garima for inspiration. 
Step wise recipe is given below, hope you all will definitely like and try it.

WHOLE WHEAT FLOUR DORA CAKES ( DORAYAKIS )



Yield: 8 pan cakes( 4 Dora cakes)
Time: 30 mins

Ingredients 

2 eggs ( at room temperature)
1 cup + 1 tbsp whole wheat flour 
1/2 cup powdered sugar 
3/4 cup milk (at room temperature)
1 tbsp honey 
1/2 tsp vanilla essence 
1 tsp baking soda
Little oil to drizzle 
Nutella or jam for filling 

Method:
Mix whole wheat flour and baking powder well and keep for later use.


Whisk eggs, sugar and honey together till little frothy . It will take 4-5 mins if you are whisking with hands. So give it time, as more lighter your egg mixture will give you more soft and fluffy pancakes.


Now add milk and vanilla essence in it and mix well. Now add flour to it in batches and mix well by folding, to a lump less smooth batter.


Now heat a nonstick tawa or pan on medium low flame, drizzle some oil on it and wipe excess oil with paper towel. Pour a ladle full of batter on it and let it cook from one side. It will take nearly 1 1/2 – 2 mins.Once you see lots of bubble on it and sides become dry then flip and cook for another one min and done.


 In the same manner, make all the pancakes. 



Be careful while cooking, to get nice brown cakes ,always use medium to low flame and flip pancake immediately once it’s sides are getting dry and having lots of bubbles on top. Otherwise you will get blackish pancakes with burnt flavour. And always use same amount of batter for each pancake to get even size Dora cakes.

Now take one pancake with nice brown side down, keep 1 tbsp Nutella or jam in middle and cover it with another pancake with its brown side up. Lightly press it with palm and pinch its edges to seal.



Your soft fluffy and yummy Dora cakes are ready to serve.



For eggless version you can substitute 2 eggs by 1 fully ripe medium size banana. Whisk banana till fluffy then follow the same procedure as above.
